Chocolate Cheesecake Bars (With Chocolate Ganache Topping)

Ingredients

Oreo Crust

  • 1½ cups chocolate cookie crumbs (Oreos, filling removed)
  • 6 tablespoons unsalted butter, melted

Chocolate Cheesecake Filling

  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • ½ cup melted semi-sweet chocolate (slightly cooled)
  • ¼ cup cocoa powder

Chocolate Ganache Topping

  • ¾ cup semi-sweet chocolate chips
  • ½ cup heavy cream

Instructions

1. Prepare the pan

Preheat oven to 325°F. Line an 8×8 baking pan with parchment paper, leaving overhang for easy removal.

2. Make the crust

Mix Oreo crumbs with melted butter until evenly combined. Press firmly into the bottom of the pan.
Bake for 8–10 minutes, then set aside.

3. Make the cheesecake filling

Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing just until combined.
Mix in sour cream and vanilla, then gently stir in melted chocolate and cocoa powder until smooth.

4. Bake

Pour cheesecake filling over the crust and smooth the top.
Bake for 35–40 minutes, until the center is set but still slightly jiggly.

5. Add chocolate topping

Heat heavy cream until just steaming (not boiling). Pour over chocolate chips and let sit for 2 minutes, then stir until smooth.
Pour ganache evenly over the cheesecake.

6. Chill

Refrigerate for at least 2 hours, or until fully set. Slice into bars.


Simply Made Tip

For ultra-clean slices, chill overnight and wipe the knife between cuts. These bars also freeze beautifully for make-ahead desserts.
