Ingredients
Peanut Butter Filling
- 1 cup creamy peanut butter
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Chocolate Coating
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil or shortening
Instructions
1. Make the peanut butter filling
In a large bowl, mix peanut butter, softened butter, powdered sugar, and vanilla until smooth and fully combined.
2. Roll into balls
Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
3. Chill
Refrigerate for 30 minutes, or until firm.
4. Melt chocolate
In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
5. Dip the buckeyes
Using a toothpick, dip each peanut butter ball into the melted chocolate, leaving a small circle of peanut butter visible at the top.
6. Set
Place dipped buckeyes back onto parchment paper and refrigerate until chocolate is set.

If the peanut butter mixture feels too soft, chill it for 10 minutes before rolling. For clean dipping, let the chocolate cool slightly before coating.
