Ingredients
Crust
- 25 Oreo cookies, crushed
- 5 tbsp melted butter
Cheesecake Filling
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp peppermint extract
- 1–2 drops red food coloring (for a pink swirl, optional)
Topping
- 1 cup whipped topping
- Crushed candy canes
- Chocolate curls (optional)
Instructions
- Preheat oven to 325°F. Line an 8×8 baking dish with parchment paper.
- Mix crushed Oreos and melted butter. Press firmly into the pan to form the crust.
- Beat cream cheese and sugar until smooth and creamy.
- Add sour cream, vanilla, peppermint extract, and food coloring (if using). Mix until combined.
- Add eggs one at a time, mixing on low speed to avoid overbeating.
- Pour filling over crust and smooth the top.
- Bake for 28–32 minutes, or until the center is slightly jiggly.
- Cool completely, then refrigerate at least 3 hours.
- Top with whipped topping and crushed candy canes before slicing.
