Cinnamon Roll Pancakes (With Cream Cheese Glaze)

🧾 Ingredients

Pancakes

  • 1½ cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1¼ cups buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Cinnamon Swirl

  • ¼ cup melted butter
  • ⅓ cup brown sugar
  • 1 tablespoon cinnamon

Cream Cheese Glaze

  • 4 oz cream cheese, softened
  • ½ cup powdered sugar
  • 2–3 tablespoons milk
  • ½ teaspoon vanilla extract

🥣 Instructions

Whisk glaze ingredients and drizzle over warm pancakes.

Whisk pancake dry ingredients in a bowl.

In another bowl, mix buttermilk, egg, melted butter, and vanilla.

Stir wet ingredients into dry just until combined.

Mix cinnamon swirl ingredients and pour into a zip-top bag (snip corner).

Heat a greased skillet over medium-low heat.

Pour pancake batter onto skillet, then swirl cinnamon mixture on top.

Cook until bubbles form, flip carefully, and cook until golden.

Cook these on medium-low heat—the cinnamon sugar can caramelize quickly if the pan is too hot.
