Ingredients
- 2 cups all-purpose flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups buttermilk
- 2 large eggs
- 1/4 cup melted butter (plus more for greasing)
- 1 tsp vanilla extract
Instructions
- Whisk dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Combine wet ingredients: In another bowl, whisk together buttermilk, eggs, melted butter, and vanilla.
- Mix together: Pour the wet ingredients into the dry ingredients. Gently stir until combined — small lumps are okay!
- Cook pancakes: Heat a nonstick skillet or griddle over medium heat and lightly butter the surface. Pour 1/4 cup of batter per pancake.
- Flip: Cook until bubbles form on top and edges look set (about 2 minutes), then flip and cook until golden brown.
- Serve warm: Stack, add butter, and drizzle with maple syrup or your favorite toppings.
