🍗 Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ teaspoon red pepper flakes
  • ⅓ cup chopped sun-dried tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • Fresh basil, for garnish

👩‍🍳 Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish.
  2. Cook the chicken: In a skillet, heat olive oil over medium heat. Season the chicken with salt, pepper, and garlic powder. Sauté until golden brown (it will finish cooking in the oven).
  3. Make the sauce: Add heavy cream, chicken broth, Parmesan, red pepper flakes, sun-dried tomatoes, and Italian seasoning to the skillet. Stir and simmer for 2–3 minutes.
  4. Assemble: Transfer chicken and sauce to the baking dish. Sprinkle mozzarella cheese evenly over the top.
  5. Bake for 20–25 minutes, until hot, bubbly, and lightly golden on top.
  6. Garnish with fresh basil before serving.

🍽️ Serving Suggestions

Serve over pasta, rice, or mashed potatoes for a cozy, complete meal. Add garlic bread and a crisp salad to round out your table.

💡 Simply Made Tip

Short on time? Use rotisserie chicken instead of raw — skip the stovetop step and go straight to the sauce!
