Ingredients
Soup Base
- 1 lb ground beef (or Italian sausage)
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (28 oz) can crushed tomatoes
- 1 (14.5 oz) can diced tomatoes
- 2 tbsp tomato paste
- 2 tsp Italian seasoning
- 1 tsp basil
- ½ tsp oregano
- ½ tsp salt
- ½ tsp pepper
- 8–10 lasagna noodles, broken into pieces
Cheese Topping
- 1 cup ricotta cheese
- 1 cup shredded mozzarella
- ½ cup grated parmesan
- Fresh basil for garnish
Instructions
- In a large pot, cook ground beef and onion over medium heat until browned; drain if needed.
- Add garlic and cook 1 minute.
- Stir in tomato paste and seasonings; cook 1–2 minutes.
- Add crushed tomatoes, diced tomatoes, and chicken broth; stir to combine.
- Bring to a simmer and add broken lasagna noodles.
- Cook 12–15 minutes, stirring often, until noodles are tender.
- Taste and adjust seasoning as needed.
- In a small bowl, mix ricotta, mozzarella, and parmesan.
- Serve soup hot with a spoonful of the cheese mixture and basil on top.

Boil the noodles separately if you plan to store leftovers — this keeps the soup from getting too thick and the noodles from absorbing all the broth.
