Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 very ripe bananas, mashed
  • ¼ cup milk

Optional: ½ tsp cinnamon


Instructions

  1. Preheat oven to 350°F. Grease a 9×5 loaf pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
  3. In a large bowl, whisk melted butter and brown sugar until smooth.
  4. Add eggs and vanilla; mix to combine.
  5. Stir in mashed bananas and milk.
  6. Add dry ingredients to wet and stir gently until just combined — do not overmix.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan 10 minutes, then transfer to a rack to finish cooling.
