For the Filling:
- 2 cups cooked chicken (shredded or cubed)
- 2 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups frozen mixed vegetables (peas, carrots, corn)
- 1 can (10.5 oz) cream of chicken soup
- ½ cup sour cream
- ½ cup milk
- ½ tsp salt
- ¼ tsp pepper
- ¼ tsp thyme (optional)
For the Biscuit Topping:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- ½ cup cold butter (cubed)
- ¾ cup milk
Instructions
- Preheat oven to 400°F (200°C). Grease a 9×13-inch baking dish.
- Make filling: In a large skillet, melt butter over medium heat. Sauté onion and garlic for 2–3 minutes until fragrant. Stir in vegetables and cook until heated through.
- Add sauce: Stir in cream of chicken soup, sour cream, milk, salt, pepper, and thyme. Add chicken and mix until creamy and combined. Pour into baking dish.
- Make biscuit dough: In a medium bowl, whisk flour, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until a dough forms.
- Top & bake: Drop spoonfuls of dough evenly over chicken mixture (or roll and cut biscuits if preferred).
- Bake 25–30 minutes, or until biscuits are golden brown and filling is bubbling.
