For the Filling:

  • 2 cups cooked chicken (shredded or cubed)
  • 2 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup sour cream
  • ½ cup milk
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp thyme (optional)

For the Biscuit Topping:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup cold butter (cubed)
  • ¾ cup milk

Instructions

  1. Preheat oven to 400°F (200°C). Grease a 9×13-inch baking dish.
  2. Make filling: In a large skillet, melt butter over medium heat. Sauté onion and garlic for 2–3 minutes until fragrant. Stir in vegetables and cook until heated through.
  3. Add sauce: Stir in cream of chicken soup, sour cream, milk, salt, pepper, and thyme. Add chicken and mix until creamy and combined. Pour into baking dish.
  4. Make biscuit dough: In a medium bowl, whisk flour, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until a dough forms.
  5. Top & bake: Drop spoonfuls of dough evenly over chicken mixture (or roll and cut biscuits if preferred).
  6. Bake 25–30 minutes, or until biscuits are golden brown and filling is bubbling.
