Ingredients
- 4 large russet potatoes
- 2 cups cooked shredded chicken
- 1 (8 oz) block cream cheese, softened
- ½ cup sour cream
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 2 green onions, sliced
Instructions
Finish with remaining bacon and green onions before serving.
Preheat oven to 400°F. Scrub potatoes and pierce with a fork several times.
Bake potatoes directly on the oven rack for 40–45 minutes, until tender.
In a bowl, mix together
cream cheese, sour cream, ranch seasoning, shredded chicken, and half of the bacon.
Slice open baked potatoes and fluff the inside with a fork.
Spoon the crack chicken mixture into each potato.
Top with shredded cheddar cheese.
Place back in the oven for 5–7 minutes until cheese melts.
