Crispy Loaded Potato Skins

🧾 Ingredients

  • 6 medium russet potatoes
  • 2 tablespoons olive oil
  • Salt & pepper, to taste
  • 1½ cups shredded cheddar cheese
  • ½ cup cooked bacon, crumbled
  • Green onions, sliced
  • Sour cream or ranch, for serving

🥣 Instructions

  1. Preheat oven to 400°F.
  2. Scrub potatoes and bake directly on the oven rack for 40–45 minutes, until tender.
  3. Let cool slightly, then cut potatoes in half lengthwise.
  4. Scoop out most of the flesh, leaving about ¼-inch shell.
  5. Brush both sides with olive oil and season with salt and pepper.
  6. Place skins cut-side down on a baking sheet and bake 10 minutes.
  7. Flip skins and bake another 10 minutes, until crispy.
  8. Sprinkle with cheese and bacon.
  9. Bake an additional 5 minutes, until cheese is melted.
  10. Garnish with green onions and serve warm.

💡 Simply Made Tip

Save the scooped potato flesh for mashed potatoes or soup. For extra crispiness, finish skins under the broiler for 1–2 minutes.
