Ingredients

For the Cookie Bars:

  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt

For the Frosting:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk or heavy cream (adjust for consistency)
  • Food coloring and sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper or lightly grease it.
  2. Cream butter and sugar together until light and fluffy. Add eggs and vanilla; mix well.
  3. Combine dry ingredients in a separate bowl, then gradually mix into the wet ingredients until smooth.
  4. Press dough evenly into the prepared pan. Bake 20–25 minutes, or until lightly golden and set. Let cool completely.
  5. Make the frosting: Beat butter until creamy. Add powdered sugar, vanilla, and milk; beat until smooth and fluffy. Tint with food coloring if desired.
