Ingredients

Cookie Base

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 ¾ cups all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • ½ tsp salt

Cheesecake Filling

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg

Cinnamon Sugar Topping

  • ¼ cup granulated sugar
  • 1 tbsp cinnamon

Instructions

  1. Preheat oven to 350°F and line a 9×13 pan with parchment paper.
  2. In a large bowl, beat butter and sugar until creamy.
  3. Add eggs and vanilla; mix until combined.
  4. Stir in flour, cream of tartar, baking soda, and salt until a soft dough forms.
  5. Press 2/3 of the dough into the bottom of the pan.
  6. In a separate bowl, beat cream cheese, sugar, vanilla, and egg until smooth.
  7. Spread cheesecake filling over the cookie crust.
  8. Crumble remaining dough evenly over the cheesecake layer.
  9. Mix cinnamon and sugar; sprinkle evenly on top.
  10. Bake 32–36 minutes or until the top is lightly golden.
  11. Cool completely, then chill at least 2 hours before slicing.
