For the Crust

  • 1 ¾ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

  1. Preheat oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper.
  2. Make the crust: Mix graham cracker crumbs, sugar, and melted butter. Press evenly into the bottom of the pan. Bake for 8 minutes, then set aside to cool.
  3. Mix the cheesecake layer: Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing just until combined.
  4. Add pumpkin: Reserve 1 cup of the plain cheesecake batter. Stir pumpkin puree, cinnamon, nutmeg, cloves, and flour into the remaining batter.
  5. Swirl and bake: Pour pumpkin batter over the crust. Add spoonfuls of the plain batter on top and swirl gently with a knife for a marbled look.
  6. Chill and slice: Bake 40–45 minutes or until set. Cool completely, then refrigerate at least 3 hours before slicing.
