Ingredients
For the Crust:
- 1 cup unsalted butter, softened
- 2/3 cup brown sugar
- 2 1/2 cups all-purpose flour
- 1/2 tsp salt
For the Filling:
- 1 cup light corn syrup
- 1 cup brown sugar, packed
- 4 large eggs
- 1/4 cup unsalted butter, melted
- 1 tbsp vanilla extract
- 1/2 tsp salt
- 2 1/2 cups chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper for easy removal.
- Make the crust: In a large bowl, beat together butter and brown sugar until creamy. Add flour and salt; mix until crumbly. Press mixture evenly into prepared pan.
- Bake crust for 15 minutes or until lightly golden.
- Prepare the filling: In a separate bowl, whisk together corn syrup, brown sugar, eggs, melted butter, vanilla, and salt until smooth. Stir in chopped pecans.
- Pour filling over the warm crust, spreading evenly.
- Bake for 25–30 minutes, or until the filling is set and golden brown.
- Cool completely before cutting into bars. Store covered at room temperature or chilled.
