Ingredients

Base

  • 4 large russet potatoes, peeled and diced
  • 4 tbsp unsalted butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups milk
  • 1 cup heavy cream

Mix-ins

  • 1 ½ cups shredded cheddar cheese
  • ½ cup sour cream
  • ½ tsp salt (more to taste)
  • ½ tsp black pepper
  • ¼ tsp smoked paprika (optional)

Toppings

  • Cooked crispy bacon, chopped
  • Extra shredded cheddar
  • Sliced green onions
  • Sour cream
  • Fresh cracked pepper

Instructions

  1. In a large pot, melt butter over medium heat. Add diced onion and cook until softened, about 4 minutes.
  2. Stir in garlic and cook 1 more minute.
  3. Add flour and whisk for 1–2 minutes to form a roux.
  4. Slowly whisk in chicken broth until smooth.
  5. Add diced potatoes, milk, and cream. Bring to a gentle simmer.
  6. Cook 12–15 minutes, stirring often, until potatoes are tender.
  7. Use a potato masher to lightly mash some of the potatoes for a thicker texture, leaving some chunks.
  8. Stir in cheddar cheese, sour cream, salt, pepper, and paprika.
  9. Let the soup simmer on low until thick and creamy.
  10. Serve hot with bacon, cheddar, and green onions.

For ultra-creamy soup without extra thickening, mash about half the potatoes directly in the pot—this naturally thickens the soup while leaving plenty of potato pieces for texture.
