Ingredients

For the Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar

  • 1 tsp baking powder

Instructions

  1. Cream butter and sugar together until light and fluffy.
  2. Add the egg, vanilla, and almond extract; beat until smooth.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until combined.
  4. Chill dough for at least 1 hour (this step helps cookies hold their shape).
  5. Preheat oven to 350°F (175°C). Roll dough on a floured surface to about 1/4-inch thickness.
  6. Cut into shapes with cookie cutters and transfer to a parchment-lined baking sheet.
  7. Bake for 8–10 minutes, until edges are just golden. Let cool before frosting.
