Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup melted butter (plus more for greasing)
  • 1 tsp vanilla extract

Ingredients

  • 1 (30 oz) bag frozen shredded hash browns (thawed)
  • 1 lb breakfast sausage (cooked and drained)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 large eggs
  • 2 cups milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Optional: diced bell peppers or green onions for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Layer the casserole: Spread hash browns evenly in the bottom of the dish. Top with cooked sausage, cheddar, and mozzarella cheese.
  3. Make the egg mixture: In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder.
  4. Pour & bake: Pour the egg mixture evenly over the sausage and hash browns.
  5. Bake uncovered for 45–50 minutes, or until eggs are set and top is golden.
  6. Rest & serve: Let sit for 5 minutes before slicing. Garnish with green onions or herbs if desired.
