  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. Mix dry ingredients: In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
  2. Make batter: In a large bowl, beat together sugar, oil, eggs, and vanilla until smooth. Gradually add dry ingredients and mix until a thick dough forms.
  3. Chill: Cover the dough and refrigerate for at least 2 hours, or overnight for best results.
  4. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Form cookies: Scoop 1-inch dough balls and roll each one generously in powdered sugar.
  6. Bake: Place on the prepared baking sheet and bake 10–12 minutes, until crinkled and set but still soft in the center.
  7. Cool: Allow cookies to cool on the sheet for 5 minutes before transferring to a rack.
