Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded + diced (optional)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt (more to taste)
  • 1/2 tsp black pepper
  • 4 cups chicken broth
  • 1 (14.5 oz) can black beans, drained + rinsed
  • 1 (14.5 oz) can corn, drained
  • 1 (10 oz) can Rotel (diced tomatoes with green chiles)
  • 2 cups cooked shredded chicken
  • 1 (8 oz) block cream cheese, softened + cubed
  • 1/2 cup heavy cream
  • Tortilla strips (for topping)

Optional toppings: shredded cheese, cilantro, lime wedges, avocado


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, bell pepper, and jalapeño; cook 5 minutes until softened.
  2. Add garlic, chili powder, cumin, smoked paprika, salt, and pepper. Cook 1–2 minutes more.
  3. Stir in chicken broth, black beans, corn, Rotel, and shredded chicken. Bring to a gentle boil.
  4. Reduce heat to low and add the cubed cream cheese. Stir until melted and smooth.
  5. Pour in heavy cream and stir to combine.
  6. Simmer 10–15 minutes, stirring occasionally, until thickened and creamy.
  7. Taste and adjust seasoning as needed.
  8. Serve hot topped with tortilla strips and favorite garnishes.
