For the Chicken:

  • 1 ½ lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • ½ tsp paprika
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp pepper

For the Bowls:

  • 3 cups cooked rice (white, brown, or cilantro-lime)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced or diced
  • ½ cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, for garnish
  • Optional: sour cream, salsa, or lime wedges for serving

Instructions

  1. Marinate the chicken: In a bowl, whisk olive oil, lime juice, and seasonings. Add chicken and toss to coat. Marinate 15–30 minutes.
  2. Cook the chicken: Grill or cook in a skillet over medium heat for 6–7 minutes per side, or until fully cooked. Slice into strips.
  3. Assemble the bowls: Divide rice among four bowls. Top with chicken, black beans, corn, tomatoes, and avocado.
  4. Add toppings: Sprinkle with cheese, cilantro, and a squeeze of lime. Add sour cream or salsa if desired.
