🍗 Ingredients
For the Chicken:
- 1 ½ lbs boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp chili powder
- ½ tsp paprika
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp pepper
For the Bowls:
- 3 cups cooked rice (white, brown, or cilantro-lime)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced or diced
- ½ cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro, for garnish
- Optional: sour cream, salsa, or lime wedges for serving
Instructions
- Marinate the chicken: In a bowl, whisk olive oil, lime juice, and seasonings. Add chicken and toss to coat. Marinate 15–30 minutes.
- Cook the chicken: Grill or cook in a skillet over medium heat for 6–7 minutes per side, or until fully cooked. Slice into strips.
- Assemble the bowls: Divide rice among four bowls. Top with chicken, black beans, corn, tomatoes, and avocado.
- Add toppings: Sprinkle with cheese, cilantro, and a squeeze of lime. Add sour cream or salsa if desired.
- Serve or store: Serve warm, or pack in meal prep containers for easy lunches all week!
